Grant,I'm not sure I understand exactly what you mean, but for a few clients we have set up payment tracking that stores in the database every transaction sent to the payment gateway, connected to an order (and the order is of course still connected to the user).
It's nice to have a payment-level record that can be browsed in the admin, to see when an auth, capture, void, or credit was made.
Those improvements correspond with a different orders/orderlines data model, so they aren't suitable for dropping into a stock Standard demo catalog, unfortunately.
