The main downside of running without MaxRequestsPerChild or ChildLife is that the Interchange child processes will leak memory over time (due to the way Perl works), faster or slower depending on your code, and eventually will burn up all your memory.
However, the built-in default for MaxRequestsPerChild is a very reasonable 50, so presumably that's what you're actually getting if you didn't specify anything yourself.
