[ic] Removing items from products.txt

I am new at this and muddling my way through updating a website that  
has many incorrect and discontinued products that I would like to  
remove from products.txt.

I'm working with Interchange 5.2.0 and fetch to upload files.

The Item editor will not allow me to delete an item. I get the message:
Internal Server Error
The server encountered an internal error or misconfiguration and was  
unable to complete your request.
Please contact the server administrator, suppressed and  
inform them of the time the error occurred, and anything you might  
have done that may have caused the error.
More information about this error may be available in the server  
error log.
Apache/1.3.34 Server at tailwags.com Port 443

The people who manage the Interface side of this are not very helpful  
and nothing seems to appear in the error log.

If I edit products.txt from Text Editor, removing the unwanted item  
and uploading it with fetch, it still appears in the item list. So  
obviously I am missing a step.

Can someone please give me a explanation of how the products.txt file  
really works, keeping in mind that I am a total novice. TIA.
