[ic] Shipping issue

I recently got an order that did not have shipping info and want to make 
sure that that will not happen again.  For starters, my shipping scheme is 
following:
If total is less than 100, then its 7
If total is more, the shipping is free

So I can't set it up so that shipping can not be 0.  Therefore, I would like 
for the checkout page to automatically select UPS Ground (which then default 
to either 0 or 7).  How would I do that?
