Is there documentation anywhere for the item-options tag?

I've got the following problem:
Sizes (S,M,L,XL) are sorting alphabetically rather than by the order 
they are entered.  Is there a way to turn off sorting or to control it?

The price display is not consistent.  Sometimes it shows the price 
delta, sometimes it does not.  What I would like to do is to always 
show the total price (base price +/- delta) in the option selector.  Is 
there a way to do this?
