    In case anyone else has the same question

Added      inventory:stock_message  to
ui_data_fields in  item_option_matrix include file and
placed the modified item_option_matrix file in
CatalogName/include directory.

ui_data_fields="MoreStuff ... inventory:stock_message  AndOthers..."
