[ic] calc of total in cart

I have looked all over and I was wondering where does interchange calc the
total-cost.  IE all items + tax + shippeng = total-cost.   I would like to
add a drop down to the checkout page where people can add insurence to the
orders.  after i do that i need to change the procedure for figuring out the
total cost but i cant find it.  Please help.  thank you.
