Would this work with a *.* to disable all alerts during a time period?

Good idea ... and if you'd like to get an alarm if the service does not
come up after maintenance, you just change this into
host.procs{daytime 03:00-03:15} postpone_to=03:15
(will send no alarm is host.procs goes down at 3:05 and comes up before
3:15, but will send an alarm if the alarm condition is still pending at
3:15)
